Semi-fatty fish of great culinary value. It reaches its fat peak in the cold months, although it offers a very stable production cycle throughout the year. The John dory can live at different depths and is mainly found in coastal waters. It is also possible to observe it in areas close to the seabed as well as at medium depth. Ours is the coastal John dory the most renowned for the fishing gear used to caught it (trammel nets and longlines).
