One of the fish with the greatest gastronomic value in existence, known and demanded worldwide by chefs of all levels. Its white flesh has a delicate, mild flavour and is very versatile when it comes to cooking, as it can be prepared in a multitude of ways. It is a flat fish, which lives on the seabed, and whose diet is made up of crustaceans, which gives it its particular flavour. Our sole comes from that peculiar area which is FAO 27 and 34, where the Atlantic and the Mediterranean meet, that particular point of combination of salinity and low temperature give it a quality status incomparable to any other.
