Unmistakable appearance, deep scarlet red colour and intense sea flavour. The flavour comes mainly from its prominent head (where the prized coral is found) and its excellent flesh, sublime for preparing a wide variety of rice dishes, sauces, soups and creams. An important characteristic is its size, of a large calibre, which allows for a multitude of preparations. The carabinero represents a high percentage of our catches, and is currently one of the most demanded species worldwide, enjoying great success among a multitude of chefs, who demand it for its image, size, flavour and versatility.
